Sausage Filled Pancake Muffins



This is one of the most simple-est meals ever!


Ingredients



  • Pancake Mix
  • Water
  • Crumbled Sausage
Directions

1. Preheat your oven to 375 degrees and lightly spray/grease your muffin pan.

2. Prepare your pancake mix how you normally would.

3. Add the crumbled sausage to the pancake mix.



4. After stirring in your sausage, divide the mixture among the muffin cups.



5. Bake for 15 minutes.

Yummy Sausage-filled Pancake Muffins!



Eat alone or serve with your favorite syrup/topping. :)

Crunchy Ranch Chicken Breasts




Ranch seasoning is a great addition to almost everything!
( haven't used it somewhere it hasn't worked yet, but don't want to say everything :))

Ingredients


  • 4 thinly sliced chicken breast
  • 1 cup of flour
  • 2 tablespoons of ranch dressing seasoning
  • 2 eggs
  • salt
  • pepper
  • 1/4 cup of water
  • 1/2 cup of cooking oil
Directions

1. Preheat your oven to 350 degrees, heat your oil in a skillet pan on medium heat.

2You'll want separate containers for the flour and eggs, using a hand for each to not clump them up. Whisk the flour and ranch dressing together. If you have the packets, use 1. 2 tablespoons equal 1 ounce, equal to 1 packet. Beat your eggs and water together.

3. Salt and pepper your chicken.




4. Dredge your chicken inside your ranch flour, fully covering it.



5. Dredge in your egg completely, then back in your flour.



6. Place your chicken in the heated oil, cooking each side for 2-3 minutes.



7. Drain your chicken on paper towels, place them on a baking pan to bake for 25 minutes.



These taste great and you can eat them pretty much any way. By themselves, on a salad, sandwich etc. Enjoy!

Funeral Sandwiches





Another pinterest find!


Ingredients


  • 1 - 12 pack of King's Hawaiian Sweet Rolls
  • 1/2lb of Turkey and Ham or meat of your choice
  • Sliced Swiss Cheese
  • 1/2 cup of Butter
  • 1 tablespoons of Worcestershire sauce
  • 2 tablespoons of Mustard
  • 2 tablespoons of Brown Sugar
  • A dash of Onion Powder
Directions

1. Preheat your oven to 350 degrees, line a pan with foil.

2. Slice your rolls, placing the bottom half's on the pan.



3. Place a layer of ham/turkey/meat of your choice.



4. Now the swiss cheese and replace the top buns.




5. Melt your butter. If fresh out of the refrigerator, 30 seconds in the microwave. Mix your ingredients. Taste it to see if it's how you want it. Worcestershire is an over powering sauce, that's why I opted for the 1 tablespoon. All up to you. Pour your glaze over the sandwiches and bake for 15 minutes.

Pizza Bites



Saw this recipe on Better Recipes, it looked yummy and easy so I gave it a try.

Ingredients


  • 3/4 cup of all-purpose flour
  • 3/4 teaspoon of baking powder
  • 1/2 teaspoon of garlic powder
  • 3/4 cup of whole milk
  • 1 egg lightly beaten
  • 1/2 cup of mozzarella cheese
  • 1/2 cup of crumbled sausage
  • 1/4 cup of mini or small-cut pepperoni

Directions

1. Preheat your oven to 375 degrees.

2. If you are like me and picked up the regular size pepperoni instead of the mini, you need to cut up your pepperoni into smaller pieces.




3. In a medium to large sized bowl, whisk you flour, baking powder and garlic powder. It looked kind of plain to me, so I added a dash of oregano(not pictured.)



4. Whisk in your milk and egg. I beat the egg inside of my milk, then whisked it into the flour mixture.



5. Stir in your cheese, sausage and pepperoni.



6. Let it sit for 10 minutes, mean while spray/grease your muffin pans.

7. Stir your mixture again and divide it among the muffin cups. Bake them for 25 minutes.



8. Get your pizza sauce, warm it in the microwave to serve with the puffs.



Nom Nom



Note: These were good, but the bread itself tasted kind of plain. Next time I would use some seasonings (garlic salt, etc) in the flour.

Bacon-Wrapped Pork Tenderloin



This is one of my pictures posted on Facebook. I did collages or end result pictures instead of posting individual pictures. 
I will have a few of these, but for future cooking, I will photograph and list the individual steps.

This was another easy one, not too many ingredient and things I actually had on hand.
I followed this recipe with no changes, except to double glaze because I had 2 tenderloins, and I may have used one or two more pieces of bacon per tender. I tried to cover them completely. The amount would depend on the size of your tenderloins.

Ingredients

5-7 slices of Smoked Uncured Bacon
1 pork tenderloin (around 1lb.)
1/4 teaspoon of black pepper
1/4 cup of brown sugar
2 tablespoons of apple juice
1 teaspoon of Dijon Mustard
A dash of nutmeg

Directions
  1. Preheat oven to 400F.
  2. Line a pan with foil, spray lightly with cooking oil. (there are types of foil where cooking spray isn't needed.)
  3. Lightly season the meat with salt(optional) and pepper. While most recipes are good, the meats sometimes lack..flavor, which a little salt and pepper can help.
  4. Wrap the bacon around your tenderloins. I wrapped them to where the last end of the bacon was on the bottom of the tenders, against the pan.
  5. Put in oven, uncovered, to bake around 20-25 minutes.
  6. Mix and bring the rest of the ingredients to a boil in a sauce pan on the stove. Medium heat, #4-6 on my stove.
  7. Halfway through the tenderloin cooking, baste the bacon wrapped meat with the glaze. Place in back in the oven for the second half of time, this time loosely covered with foil.


After a few minutes of letting it cool, it's ready to serve!

This is something I would serve again.

Cream Cheese Pound Cake

Ingredients


  • 1 1/2 cups butter, softened at room temp
  • 1 (8-ounce) package cream cheese, softened at room temp
  • 3 cups sugar
  • 6 large eggs
  • 3 cups all-purpose flour
  • 1/8 teaspoon salt
  • 1 tablespoon vanilla extract

Directions


Beat butter and cream cheese at medium speed with an electric mixer until creamy. (do not over beat.)

Gradually add sugar, beating well.

Add eggs, 1 at a time, beating until combined. 




Sift 3 cups of flour.
Combine flour and salt; gradually add to butter mixture, beating at low speed just until blended after each addition. 
Stir in vanilla.

Pour batter into a greased and floured 10-inch Bundt pan.
Smooth the top of the cake with a spatula to even it out.




Bake at 300° for 1 hour and 40 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 to 15 minutes; remove from pan, and let cool completely on wire rack.



Note: I know that's a long time for a cake to bake. One time, I went ahead and put it on 425 and made it in little over half the time. It's really up to you. I constantly checked it, just to make sure it was alright.

Baked Chicken Fajitas

MY Baked Chicken Fajitas Recipe:
(Serves 4-6)

Ingredients:
1 to 1.5lb pack of chicken tenders
1 (15 ounce) can of hunts diced tomatoes with onions and peppers
1 bag of frozen peppers and onions mix
2 Tablespoon vegetable oil
1 packet of fajita seasoning
1 teaspoon garlic salt
1/2 teaspoon pepper
12 flour tortillas

Directions:
Preheat the oven to 400 degrees. Line a 13×9 baking dish/pan with foil (really any size will due). Cut up the tenders into bite size pieces. In a medium sized bowl, mix EVERYTHING together (except the tortillas of course :)) Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender.  Serve with warmed tortillas! (I microwaved each one for 10 seconds.)

Again, this is an easy one, the only real work is cutting up the chicken!
