Sausage Filled Pancake Muffins



This is one of the most simple-est meals ever!


Ingredients



  • Pancake Mix
  • Water
  • Crumbled Sausage
Directions

1. Preheat your oven to 375 degrees and lightly spray/grease your muffin pan.

2. Prepare your pancake mix how you normally would.

3. Add the crumbled sausage to the pancake mix.



4. After stirring in your sausage, divide the mixture among the muffin cups.



5. Bake for 15 minutes.

Yummy Sausage-filled Pancake Muffins!



Eat alone or serve with your favorite syrup/topping. :)

Crunchy Ranch Chicken Breasts




Ranch seasoning is a great addition to almost everything!
( haven't used it somewhere it hasn't worked yet, but don't want to say everything :))

Ingredients


  • 4 thinly sliced chicken breast
  • 1 cup of flour
  • 2 tablespoons of ranch dressing seasoning
  • 2 eggs
  • salt
  • pepper
  • 1/4 cup of water
  • 1/2 cup of cooking oil
Directions

1. Preheat your oven to 350 degrees, heat your oil in a skillet pan on medium heat.

2You'll want separate containers for the flour and eggs, using a hand for each to not clump them up. Whisk the flour and ranch dressing together. If you have the packets, use 1. 2 tablespoons equal 1 ounce, equal to 1 packet. Beat your eggs and water together.

3. Salt and pepper your chicken.




4. Dredge your chicken inside your ranch flour, fully covering it.



5. Dredge in your egg completely, then back in your flour.



6. Place your chicken in the heated oil, cooking each side for 2-3 minutes.



7. Drain your chicken on paper towels, place them on a baking pan to bake for 25 minutes.



These taste great and you can eat them pretty much any way. By themselves, on a salad, sandwich etc. Enjoy!

Funeral Sandwiches





Another pinterest find!


Ingredients


  • 1 - 12 pack of King's Hawaiian Sweet Rolls
  • 1/2lb of Turkey and Ham or meat of your choice
  • Sliced Swiss Cheese
  • 1/2 cup of Butter
  • 1 tablespoons of Worcestershire sauce
  • 2 tablespoons of Mustard
  • 2 tablespoons of Brown Sugar
  • A dash of Onion Powder
Directions

1. Preheat your oven to 350 degrees, line a pan with foil.

2. Slice your rolls, placing the bottom half's on the pan.



3. Place a layer of ham/turkey/meat of your choice.



4. Now the swiss cheese and replace the top buns.




5. Melt your butter. If fresh out of the refrigerator, 30 seconds in the microwave. Mix your ingredients. Taste it to see if it's how you want it. Worcestershire is an over powering sauce, that's why I opted for the 1 tablespoon. All up to you. Pour your glaze over the sandwiches and bake for 15 minutes.

Pizza Bites



Saw this recipe on Better Recipes, it looked yummy and easy so I gave it a try.

Ingredients


  • 3/4 cup of all-purpose flour
  • 3/4 teaspoon of baking powder
  • 1/2 teaspoon of garlic powder
  • 3/4 cup of whole milk
  • 1 egg lightly beaten
  • 1/2 cup of mozzarella cheese
  • 1/2 cup of crumbled sausage
  • 1/4 cup of mini or small-cut pepperoni

Directions

1. Preheat your oven to 375 degrees.

2. If you are like me and picked up the regular size pepperoni instead of the mini, you need to cut up your pepperoni into smaller pieces.




3. In a medium to large sized bowl, whisk you flour, baking powder and garlic powder. It looked kind of plain to me, so I added a dash of oregano(not pictured.)



4. Whisk in your milk and egg. I beat the egg inside of my milk, then whisked it into the flour mixture.



5. Stir in your cheese, sausage and pepperoni.



6. Let it sit for 10 minutes, mean while spray/grease your muffin pans.

7. Stir your mixture again and divide it among the muffin cups. Bake them for 25 minutes.



8. Get your pizza sauce, warm it in the microwave to serve with the puffs.

Note: These were good, but the bread itself tasted kind of plain. Next time I would use some seasonings (garlic salt, etc) in the flour.

Homemade Smoked Gouda and Cheddar Macaroni and Cheese.

I saw this on Pinterest and had to give it a try!

Ingredients


  • 1 - 16 oz box of Macaroni Noodles
  • 2 Eggs
  • 5 tablespoons of Butter
  • 1/4 cup of flour
  • 2 & 3/4 cups of Fat-Free Half and Half
  • 2 teaspoons of Dry Mustard
  • 1 cup of Smoked Gouda (Boar's Head 8 oz block)
  • 2 cups of Cheddar Cheese (Kraft 2 cup bag)
  • 2 cups of Sharp Cheddar (Kraft 2 cup bag)
  • 1/2 teaspoon of Salt
  • 1 teaspoon of Cajun seasoning
  • 1 teaspoon of Pepper

Now let's get cooking!

1. Preheat your oven to 350 degrees.
2. Boil your noodles until firm. Depends on you noodles, but mine took a little under 10 minutes. I've always added a dash of salt and a little olive oil to my water when boiling pasta. That's optional.



3. While the noodles are boiling, go ahead and shred your cheese. I opted for pre-shredded cheddar and sharp cheddar, the Gouda I shredded myself. After all the cheese is shredded, mix it up.



4. Drain the noddles and run them under cold water to cool them and stop the cooking process.




5. In a large pot, on medium heat (#5 on my stove), first melt your butter and sprinkle in the flour, stirring it constantly. I did this for about 2 minutes, until the flour was completely mixed into the butter.



6. Stir in your half and half and dry mustard. It will start to thicken up as it cooks.



7. In a separate, small bowl, beat your eggs. I took a cooking spoon-full of the half and half mixture and mixed it into the eggs. Stir the egg mix into the pot until combined, making your "sauce" a light yellow color. Turn it on low heat (#1.)



8. Stir about 4 cups of your mixed cheese into the pot until the cheese is all melted and creamy.




9. Add your seasonings (salt, pepper, cajun.) You may want to use more or less, this is solely up to you. Taste it to make sure it's how you want it.




10. Add your noodles! Mix the noodles into the cheesy sauce until it is all covered.



11. Pour your noodle mix into a greased baking pan. My smaller pans were in use, I ended up using an aluminum foil pan. Really doesn't make a difference, long as it fits! Take your remaining cheese and sprinkle it over the top.



12. Bake uncovered for 25 minutes.



And Voila!
Cheesy goodness!

Crockpot Honey Bourbon Chicken


Thank you Table for Two for the meal idea!

Now here's my take on it.













Ingredients
6 Chicken thighs
garlic salt and pepper
cornstarch
1-1/2 cups of honey
1/2 cup of ketchup
3/4 cup of soy sauce
1/4 cup of vegetable oil
1 teaspoon of red pepper
3/4 cup of diced onion

____________________________________________

Get out your chicken thighs!



Take off the skin and as much fat as you can. (I hate this part!)
While the chicken is by itself, go ahead and season it with garlic salt and pepper.




Now to mix up your sauce/glaze.
Mix your remaining ingredients up
(honey, ketchup, soy sauce, red pepper, onions and oil)



You can go ahead and place your chicken and the crock pot and pour the glaze over it.
I chose to ziplock and marinate, I wasn't quite ready to cook it yet!
I let it sit about 4 hours.



And to the crockpot it goes! (High setting)



2 HOURS later..
I take the thighs out, using a fork to separate the meat from the bone.
It's tender, takes very little effort.



I then add my cornstarch. It's like flour, used to thicken foods.
I used 2 tablespoons, 1/4 cup of water to mix and added it to the crock pot.
It's up to you how much you use, you may want it thicker or thinner.
I let it continue to cook on high for 30 more minutes.



And there you have,
CROCK POT HONEY BOURBON CHICKEN


Not bad at all, except next time I think I'm going for the boneless, skinless chicken!
